Kellogg’s Easy Chocolate Cake
This cake has been a family birthday tradition for generations. The icing soaks in and is nearly a glaze, pooling brilliantly in the corners.
Cake
2 cups sugar
2 cups flour
4 tablespoons cocoa
1 1/2 stick melted butter
1 cup boiling water
1/2 cup buttermilk (or regular milk with 1/2 teaspoon white vinegar)
1 teaspoon baking soda
2 beaten eggs
1 teaspoon vanilla extract
Pinch of salt
Icing
2 sticks butter (melted)
6-8 oz powdered sugar (to taste)
2 tablespoons cocoa
3 tablespoons milk
Using a mixer, mix sugar, flour, and cocoa. Pour melted butter and boiling water over dry mixture. Then add milk, soda, eggs, vanilla, and salt. Mix thoroughly. Pour into 13 x 9 x 2 inch cake pan. Bake 25 minutes at 400 degrees.
In medium bowl, combine icing ingredients and stir.
Remove cake from oven and pour icing over hot cake, in pan. Let cool before serving.
